Our Production Process
From tree to your home, an artisanal savoir-faire
From Tree to Your Home
Our extra virgin olive oil is the result of an entirely mechanical process, with no chemical treatment whatsoever. From harvest to packaging, every step is carried out with the utmost care. Same-day processing from picking to extraction is essential to achieve premium quality oil with acidity below 0.2%.
The Harvest
From October to December, when olives reach optimal ripeness. Cobrançosa (80%) and Cordovil (20%) are mechanically harvested with vibrating equipment that preserves fruit integrity and protects the trees.
Transport to the Mill
Olives are delivered to the mill within hours of harvest. Each hour increases acidity and degrades quality. Our partner mill is less than 10 minutes away, guaranteeing same-day processing.
Cold Extraction
Mechanical process below 27°C. Olives are sorted, crushed into paste, then centrifuged to separate oil from water and solid residue. No solvents or additives. Polyphenols, vitamins and natural aromas are preserved.
Packaging
Two formats: dark glass bottle (UV protection, elegant table service) and Bag-in-Box (vacuum pouch preventing air contact, economical and ecological).
